The Breakfast Taco | Dedicated to Shani
Let’s face it, tacos are delicious. I didn’t plan to make tacos, it just happened. I looked in my cold box and the ingredients floated onto my butcher block. I sure do like baby-sized corn tortillas!
The ‘Pea
For the tacos:
Teeny tiny corn tortillas
Black beans
Avocado
Salsa Verde (The green stuff.)
Red Onion, chopped
Sour Cream
Cilantro
Scrambled Eggs
Parmesan cheese, a sprinkle
For the potatoes:
Butter
Red potatoes, chopped
Garlic, a lot
Red Onions, chopped
Marjoram
Red Pepper Flakes
Cilantro, for garnish
S & PBasically, all you have to do is pile the shit onto the taco. For the potatoes, I boiled them after they were chopped until soft. Sauteed garlic, butter, spices and onions then threw the potatoes in after a few minutes.
You know what is the best on breakfast potatoes? Louisiana hot sauce.
