On Election Day, Cathy linked to a recipe for “Votemeal Cookies.” That evening, I arrived home from four intense days of canvassing in Wilkes-Barre, PA, with two little rescued kittens in tow.  I was nervous and excited and baking cookies seemed like the only thing I could do to maintain a semblance of sanity.
The cookies turned out A-MA-ZING: oaty, chewy, and chocolaty, with an unexpected spicy-tart twist (they’re glazed with apple cider vinegar, cinnamon, and a pinch  of cayenne!).  I’ve made them many times since — for Thanksgiving, for birthday parties (including Cathy’s), for holiday parties.  Every time, people rave and demand the recipe.
One BIG note: without even realizing it, I’ve been substituting apple cider vinegar in the glaze for apple cider.  It works very well — it’s a perfectly (subtly) tart counterbalance to the sweetness of the cookie.
