“Far from Pallid Salad”- Baked Goat Cheese Encrusted with Homemade Breadcrumbs and White Balsamic Mushroom Salad
It’s been awhile since I’ve indulged in my favorite cheese. So, while I was doing my Trader Joe’s run this weekend, I picked up a small log of herbed goat cheese.
Eager to use my new cheese purchase, I decided to run with the idea of doing a baked goat cheese. After last night’s dinner, I think I may need round two of this awesome concoction.
What You Need (serves 1):
For the Breadcrumbs:
1 Slice of Bread
Fennel Seeds (to taste)
Garlic Salt (to taste)
Onion Powder (to taste)
Oregano (to taste)
1. Using a microplane or box grater, grate the slice of bread so that it creates fine breadcrumbs. Season the crumbs with the fennel seeds, garlic salt, onion powder and oregano. Lightly toast the crumbs and set aside.
For the Goat Cheese:
H erbed or Plain Goat Cheese (sliced into 1/2”-1” slices)
Homemade Breadcrumbs
1. Coat the goat cheese slices in the homemade breadcrumbs. Then place the goat cheese disks onto a plate. Wrap the plate in plastic and set in the fridge until ready to bake.
For the Mushrooms:
5-6 White or Baby Bella Mushrooms (washed and patted dry)
1/2 Cup of White Balsamic Vinegar
1. In a small saute pan, combine the mushrooms and white vinegar. Bring the vinegar to a boil, then reduce to a simmer. Allow the liquid to reduce until it has thickened, then cover the pan with a lid. Allow mushrooms to steam until they are knife-tip tender (a tip of a knife will easily puncture the mushroom). Then set aside.
For the Cherry Tomatoes:
6-8 Cherry Tomatoes (cut in half)
1/4 Cup Balsamic Vinegar
3-4 Fresh Basil Leaves (chiffonade cut)
1. Combine all ingredients in a small bowl. Stir to coat tomatoes, then set bowl in fridge until ready to serve.
To Assemble Salad:
1 Stalk of Romaine Lettuce (or lettuce of choice)
Goat Cheese
Cherry Tomatoes
Mushrooms
1. Place all ingredients except for the goat cheese onto your serving plate. Next, remove the goat cheese from the fridge and unwrap them. Place the disks onto a baking sheet and place in the toaster or oven to warm the goat cheese (about 2 minutes).
2. Once the goat cheese is warmed, place the disk on top of the salad. Drizzle your dressing of choice on top of the salad and serve immediately.
