We begin this Tumblr (which will be a place for recipes, articles, and other culinary musings from the lovely @garau and me, @kthread) with a quandary:
What is the proper lobster roll?
Is is the Red Hook Lobster Pound roll (first in the slideshow) with the crunchy, just-brushed-with-butter bun, the scallions on top and celery below, the subtle spices shaken on at the Brooklyn Flea?
Or the roll (second in the slideshow) from Red’s Eats in Wiscasset, Maine with its large, luscious bits of lobster, nothing on the meat or the roll, and the doughy roll with drawn butter to pour on top, eaten outside overlooking Maine waters?
